Versante Nord by Eduardo Torres Acosta is a Sicilian white wine that expresses the authentic character of the Terre Siciliane, vinified through spontaneous fermentation and aged in concrete and old barrels. This blend of local grapes combines Minnella Bianca, Carricante, Catarratto, Inzolia and Grecanico in an essential and expressive profile. On the palate, it stands out for its marked mineral footprint, offering a taut, vibrant sip with a textural quality. Its linear freshness makes it ideal for pairing with cheeses and lean fish.
Where it comes from
The grapes come from the Sicily region, on the northern slopes of Etna, from historic parcels located in the districts of Pietramarina, Allegracore, Piano Daini, Frierà, Zucconero and Marchesa. The vineyards are situated between 550 and 930 metres above sea level and are cultivated with the utmost respect for the environment. The 50-year-old vines, trained using the alberello and double cordon systems, take root in soils composed of volcanic ash sands. This unique terroir gives the wine a vibrant tension and precision, the result of an ecosystem where white grape varieties historically grow among the red grape rows.
How it is produced
The harvest takes place in the last week of September. In the cellar, the must begins spontaneous fermentation with indigenous yeasts, followed by skin maceration for two days without temperature control. Ageing continues in concrete tanks and old barrels, allowing for an evolution that fully respects the territorial identity. This results in a white wine with a compact and dynamic structure, deeply linked to the energy of the volcanic soil.
History and Facts
Eduardo Torres Acosta's Versante Nord 2025 celebrates authentic Etnean viticulture, originating from vines aged over 50 years rooted in high-altitude volcanic sands. Cultivated in the most historic districts, these ancient plants carry on the tradition of mixing white grapes within the rows of Nerello Mascalese. Thanks to spontaneous fermentation with short maceration and patient resting in concrete and old barrels, the wine offers a vibrant and faithful expression of the territory, awarded 91 points by Decanter.

In 2012, he participated in the grape harvest at Arianna Occhipinti's, and a year later he worked as an oenologist at the Passopisciaro winery, attracted by the volcanic territory. In 2014, he began his work to restore the leased vineyards on Etna's northern slope. In the same year he bottled his first vintage.
Today we work 4.7 ha divided into 9 vineyards at different heights and districts. We continue to recover old vineyards that are 90% cultivated with the traditional alberello system. Today the company believes in the importance of continuous comparison and sharing with other producers, in the knowledge of other territories and other varieties.
