What type of wine it is
Methius Trento Brut Riserva Dorigati is a sparkling wine produced using the Traditional Method which expresses the authentic character of the Trentino territory. The result of a careful blend of Chardonnay and Pinot Noir, it presents in the glass with a bright straw-yellow colour, golden reflections and a fine, persistent perlage. The aromatic profile is intense, enriched by notes of ripe fruit and delicate spicy nuances. On the palate, it reveals a creamy and enveloping mousse, offering a pleasant sensation of softness combined with a balanced structure, closing with a long aromatic persistence.
Where it comes from
The grapes come from the historic hills of Faedo and Pressano, in Trentino, grown at an altitude of between 350 and 500 metres. The Dorigati winery manages the vineyards using the traditional Trentino pergola system, applying short pruning and careful bunch thinning to limit yields and promote aromatic concentration. This balance between altitude and vineyard management defines the style of the wine, whose maturation takes place in Mezzocorona in an atmospheric fully underground cellar, characterised by historic stone-vaulted rooms.
How it is produced
The preparation of the cuvée takes place in spring, with part of the Chardonnay fermented in barrels to provide greater structure. This is followed by slow secondary fermentation in the bottle at a controlled temperature. The wine ages for approximately five years on the lees, benefiting from periodic stirring which enhances its complexity. Once the manual riddling on the pupitres and disgorgement with the addition of the liqueur d’expédition are completed, the sparkling wine continues with a final ageing of six to eight months. This resting period is essential for best integrating the components and perfecting the wine's gustatory harmony.
