Saint-Aubin Blanc by Patrick Miolane is a still white wine with the Saint-Aubin appellation, produced in Burgundy. This bright golden Chardonnay features an olfactory profile of white flowers and a fruity palate, with buttery and toasted nuances. Natural fermentation with indigenous yeasts and twelve months of ageing in oak barrels and tanks define its smooth and round style.

Where it comes from

The grapes originate from Saint-Aubin, a renowned wine-growing area in Burgundy. The vineyards, distributed across small parcels, have a south-easterly exposure. The terrain sits on clay-limestone soils, which give the wine freshness and a solid structure. This specific parcel origin translates into an ideal taste balance between tension and smoothness, precisely outlining the identity of the terroir.

How it is produced

The process begins with manual harvesting and double sorting to isolate perfectly healthy bunches. This is followed by low-pressure pressing, essential for preserving aromas and avoiding oxidation. Natural fermentation starts slowly thanks to the use of indigenous yeasts. The wine then matures for twelve months in vats and oak barrels, before being combined in a careful blend prior to bottling, aimed at harmonising freshness and roundness.

The Miolane estate consists of nine hectares of vineyards at Saint-Aubin, a village in the prestigious Côte des Blancs area.

Operations are run by Patrick, a larger-than-life character who loves a good joke, and his dynamic, forward-looking daughter, Barbara. They make a perfect pair, each responsible for their own sphere of activity: Dad looks after the vineyard; Barbara is in charge of the wine-making and marketing.

The estate produces fourteen Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet appellations, including premier cru, villages and regional wines. The whites very much reflect the local growing conditions (the terroir), in particular the mineral quality of the soil. Where reds are concerned, the estate boasts a number of pinot noir wines which are aged for a long time and allowed to mature slowly. They are rich in red-berry-fruit flavours, with finely structured tannins.
