Description
What kind of wine it is
The Chablis by Domaine Fourrey is a still white wine with a Controlled Designation of Origin from Burgundy, expressing the authenticity of pure Chardonnay. This glass embodies a classic and elegant style, standing out for its clean drinkability and pronounced mineral character. The bouquet opens with fresh notes of lemon and green apple, enriched by distinct chalky hints. On the palate, it is harmonious and well-structured, balancing a lively acidity with a subtle creaminess, finishing with a clean and persistent aftertaste, enhanced by light nuances of dried fruit and hints of sea breeze.
Where it comes from
This label originates in Burgundy, in the renowned Chablis region. The estate's vineyards stretch between the villages of Milly and Fleys, nestled along the banks of the Serein river. In this area, the influence of a cool climate is essential in defining the wine's identity, maintaining perfect gustatory tension. The nature of the soils enhances the expression of the grape variety, imparting those unmistakable savoury and mineral notes to the glass, ensuring a clean and vibrant finish.
How it is produced
Vineyard cultivation follows a strict organic and sustainable approach, aimed at protecting the integrity of the grapes. In the cellar, processes are designed to preserve the natural freshness of the fruit, avoiding invasive practices to faithfully respect the territorial expression. The process yields a harmonious white, where pronounced verticality merges with a full and balanced structure. Thanks to this careful attention, the wine boasts excellent ageing potential, developing greater complexity over time.

Since 1992, I, Jean‑Luc Fourrey, have been managing the Domaine. I studied at the Lycée Viticole in Beaune and hold a Higher Technician Diploma in Viticulture and Oenology. Today, I share this journey with my family — I am married and the father of Emile, born in 2012.
The daily work at the estate is carried out with the support of a team of seven collaborators: a sales assistant, two tractor drivers, one cellar‑and‑vineyard worker, and three vineyard workers. A group made up of three women and four men, where I encourage versatility and the continuous development of individual skills.
Our vineyards are mainly located in Milly — on my father’s side — and in Fleys — on my mother’s side — spread across both banks of the Serein River, at the very heart of the Chablis region. Read more
