Domaine Buronfosse Chardonnay Varron is an organic white wine from the Jura. An authentic expression of Cotes du Jura, it displays a straw yellow colour enhanced by delicate golden highlights. The aromatic profile is characterised by elegant floral notes, while the blend of Chardonnay and Savagnin shapes a broad and rounded style, supported by a precise and orderly structure. Where it comes from
The vineyards located in Rotalier take root in soil composed of Bajocian marl and limestone layers. This particular geological matrix defines the identity of Cotes du Jura, imparting a profound sense of place to the glass. The balance between the marl and limestone components gives the palate extraordinary gustatory precision, enhancing the natural breadth and complex structure that characterise this white.
How it is produced
The production process involves careful vinification followed by ageing in barrels for twenty months. During this period, resting in contact with the lees allows the wine to gain texture, harmoniously integrating the floral bouquet. This technical choice ensures stability and aromatic finesse in an organic white wine of great character. Ideally served between twelve and fourteen degrees, it pairs perfectly with lean fish dishes, white meats or delicate cheeses.
