What kind of wine it is
Daniel Sigmund Riesling is a semi-aromatic white wine made from Riesling grapes, an expression of the Mitterberg in Trentino-Alto Adige. Its fresh and elegant profile offers a defined structure, enhanced by spontaneous fermentation carried out by indigenous yeasts. The malolactic fermentation softens the grape variety’s natural sharpness, ensuring perfect taste balance. The absence of filtration preserves the wine’s natural complexity, making it ideal for pairing with lean fish dishes, cheeses, and white meats.
Where it comes from
The grapes are grown in the Lahner and Holzer sites, cultivated according to strict organic and sustainable principles. The vineyards are located between 650 and 770 metres above sea level, benefiting from a south-east exposure that ensures balanced ripening of the bunches. The vines, trained using the Guyot system, sink their roots into quartz phyllite and granite soils. This geological matrix gives the wine a distinct mineral character, ensuring the taste tension and aromatic precision typical of the finest high-altitude expressions.
How it is produced
Harvesting takes place at the beginning of October from vineyards with a limited yield. The cellar process follows natural methods, without temperature control. The wine matures for eleven months in small wooden barrels, a crucial phase for integrating its structure, and then rests for a further five months in steel tanks. Unfiltered bottling completes the production cycle, preserving the material integrity and original aromatic richness of the grape variety.
