Casale Ciliani Nero di Troia is a still red wine by D’Addario that fully expresses the vocation of the Apulian territory. Made from Nero di Troia grapes, it displays a deep ruby colour, so intense it appears almost black. The bouquet is clear, characterised by enveloping notes of wild berries, delicate hints of violet and touches of star anise. On the palate, it is harmonious, supported by delicate and balanced tannins that lead to a persistent finish. Thanks to its structure, it pairs excellently with flavoursome game, beef-based dishes and medium-aged cheeses.
Where it comes from
This wine stands among the great reds of Southern Italy, alongside historic varieties such as Primitivo and Negroamaro. Its roots are linked to the locality of Troia, situated in the northern part of the region. Uva di Troia is a low-yielding grape variety, prized for its high quality and remarkable ageing potential. Cultivation is concentrated in the provinces of Bari, Foggia and Barletta-Andria-Trani, where the climate favours excellent ripening. Recognised throughout Apulia, it enhances a clear territorial identity, delivering a decisive and authentic character.
How it is produced
Production follows a straightforward process aimed at preserving the aromatic freshness of the variety. The wine rests for three to four months in stainless steel, a technique that enhances the primary fruit aromas while maintaining a structured and orderly taste. To fully appreciate its long persistence, it is recommended to decant the wine for an hour before serving. It boasts excellent longevity and is best enjoyed at a serving temperature between 18 and 20 degrees, or between 14 and 16 degrees to highlight its elegant spicy and floral nuances.
