Etna Rosso Cottanera is a still red wine with a Denominazione di Origine Controllata (DOC) status from Sicily, produced exclusively from Nerello Mascalese grapes. The glass, with its bright ruby red colour, reveals an olfactory profile enriched by floral notes, small red fruits and Mediterranean scrub herbs, whilst on the palate it expresses itself with balance and elegance, supported by a marked minerality and a solid structure. The tannins, dense and austere, guide the palate towards a long and persistent finish. Ageing in barrels and steel defines its character, making it ideal for pairing with pasta dishes with ragù, braised meats and mature cheeses.
Origin
The vineyards in the Etna area are located in the municipality of Castiglione di Sicilia, cultivated with spurred cordon training between 670 and 770 metres above sea level with a northern exposure. The black volcanic soils, rich in alluvial and clay inclusions, infuse the wine with its characteristic gustatory tension. The proximity of the Alcantara River ensures a strong temperature range, a crucial element for the correct development of the aromatic profile of the clusters. The harvest takes place in the second ten days of October through rigorous manual picking.
Production process
After de-stemming, the must starts alcoholic fermentation at a controlled temperature. Maceration on the skins lasts from 20 to 25 days, with daily pump-overs aimed at encouraging polyphenolic extraction. Malolactic fermentation and the first ageing period take place in medium-toasted French oak barrels for nine months. The wine then rests in steel for about eight to ten months, concluding its ageing with a further eighteen months in the bottle. This careful production process yields a profile of great longevity and clear technical precision.
