Where it comes from

The spur-pruned cordon training system and careful plant management limit yields, concentrating the expressiveness of the bunches. How it is produced
Vinification begins with an entirely manual harvest. The must undergoes fermentation in French oak barrels for part of the batch, while the remainder rests in concrete vats. This dual approach is also reflected in the next stage, where the wine undergoes a prolonged ageing on the lees for twelve months, again divided between wood and concrete. The entire process, carried out according to strict organic and sustainable farming practices, aims to shape a profile in which the softness imparted by the barrels is combined with the brilliant freshness preserved by the concrete.
