Alta Langa Rosé Extra Brut by Colombo is a rosé sparkling wine with a controlled and guaranteed designation of origin from Piedmont, featuring a dry profile and an authentic expression of Pinot Noir grapes vinified using the Traditional Method. The glass reveals a pale pink colour and a very persistent perlage, which precedes an intense bouquet. Clear notes of raspberry, redcurrant and hints of spring flowers emerge, enriched by nuances of talcum and powder. On the palate, it reveals a firm structure and an excellent balance between body and freshness, offering a silky sip that fades into a pronounced mineral savouriness.
Where does it come from
This wine originates in the municipality of Bubbio, a highly renowned area in Piedmont for the production of Alta Langa. The Colombo estate’s vineyards, situated at two hundred and fifty metres above sea level, benefit from the ideal climate to preserve the gustatory tension of the grapes. Careful management of the rows allows for perfectly balanced fruit. The identity of the territory is reflected in a clear mineral imprint, further refined during the patient ageing in the estate’s cool underground cellars.
How is it produced
The process begins with manual harvesting, with careful selection of the bunches. After gentle pressing, the must ferments in stainless steel at a controlled temperature. The secondary fermentation takes place in the bottle according to the strict principles of the Traditional Method, followed by a prolonged ageing on the lees for sixty months, which is essential for imparting complexity to the wine. The cycle concludes with the traditional remuage on pupitres and disgorgement, essential practices that ensure clarity and harmonious elegance in every sip.

The remuage and disgorgement ensure an elegance that has been awarded Tre Stelle Oro Veronelli and 4 Viti AIS.

After the purchase, in 2004, of the nine hectares of vineyards surrounding Cascina Pastori, the business began in 2006 with the inauguration of the new winery, conceived in full respect of the surrounding environment. But a 'fortuitous' meeting in July 2010 allowed the company to broaden its perspective.
