Chavost Champagne Eureka Brut Nature is an outstanding wine produced according to the strict Traditional Method, designed to express a dry profile with great character. It is born from a harmonious blend of Pinot Noir, Pinot Meunier and Chardonnay grapes, offering a sip with significant structure. The aromatic spectrum combines buttery notes and lactic nuances with a mineral austerity reminiscent of chalk and grey pepper, with subtle hints of small red fruits. On the palate, it is extremely vinous and powerful, with a rich body balanced by vibrant freshness and a persistent finish typical of the varieties that compose it.

Where it comes from

This wine originates from the commune of Chavot-Courcourt, located in the renowned Champagne region. The vineyards grow on clay-limestone soils with a northern exposure, a crucial technical choice to maintain natural acidity and impart a pronounced mineral tension to the harvest. Vineyard management adopts sustainable practices to protect the environment and the natural vocation of the area. The terroir is clearly expressed in the glass with distinct chalky notes and a depth of flavour that celebrates the territorial identity of the region.

How it is produced

The winemaking process begins with manual harvesting of the bunches at perfect ripeness. In the cellar, alcoholic fermentation and the subsequent prise de mousse, as required by the Traditional Method, occur spontaneously thanks to the action of indigenous yeasts. Chavost follows the philosophy of Brut Nature with zero dosage, avoiding the addition of sugars at any stage. The process is carried out without the use of added sulphites and without fining, filtration or refrigeration. Any slight cloudiness is evidence of minimal oenological intervention, aimed at preserving all the original purity and organoleptic integrity.

Our estate was created in 1946 by the will of our elders, winegrowers of Chavot-Courcourt. Chavost is the ancestral name of the village, which formerly was located between the Saint-Martin Church and the Mount Felix hill, upon which a castle was established. Our ancestors have given us their strong collective values, solidarity, sharing, and the love of our lands.Now more than ever, we put all our forces in common to grow high quality grapes, giving us the chance to elaborate unique wines of Champagne.

Our commitment in preserving the environment, our land and the excellence of our wines, is expanding along with a deep conviction. In harmony with our philosophy and values, we decided to produce and launch a new range of wines. Thanks to a mastered vinification, that does not include added sulfites, the range « Et sans sulfites ajoutés ! » ( meaning « No added sulphites ! »), is composed of a singular and atypical wines. It comes in addition to the traditional range.
