What kind of wine it is
The Müller Thurgau Brut sparkling wine from Cavit is a refined expression of Trentino Alto Adige. Born in the territory of the Dolomiti Vineyards, it reveals in the glass a straw-yellow colour with greenish highlights, enlivened by an extremely fine and persistent perlage. The bouquet is delicately aromatic and enriched with a spicy note. Thanks to the prise de mousse with the Charmat Method and the well-balanced Brut dosage, the palate is dry, pleasantly smooth and fresh in character.
Where it comes from
The grapes grow in the heart of the Dolomiti Vineyards area, between the Val di Cembra, the Cavedine Valley and the Brentonico Plateau. The vineyards reach up to 800 metres above sea level, benefiting from an Alpine mountain climate whose temperature variations encourage the development of clear and complex aromas. The geology is varied: the volcanic soils of porphyric origin in the Val di Cembra alternate with the fluvio-glacial soils of Cavedine and Brentonico, giving the Müller Thurgau an authentic vitality.
How it is produced
The process begins with manual harvesting and selection of the bunches. This is followed by gentle pressing and a brief cold maceration on the skins to extract the fragrance of the must. The white vinification at controlled temperature preserves the aromatic integrity of the Müller Thurgau. Finally, the slow prise de mousse in autoclave according to the Charmat Method ensures a final result that is dry, harmonious and highly enjoyable.

Created in 1882 by Professor Hermann Müller from the cross between Riesling Renano and Chasselas, this grape variety excels in the Trentino region. The Special Vintage Cuvée from Cavit celebrates this historical heritage and the deep connection with the Vigneti delle Dolomiti IGT, where the vines grow up to 800 metres above sea level. The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.
Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.
Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
