The Franciacorta Pas Dosé Cuvée Terre dei Trici from Cascina San Pietro is a Metodo Classico white wine produced exclusively with Chardonnay. Within the Franciacorta region, this Zero Dosage expression is distinguished by a fine and persistent perlage, capable of supporting a clear sensory profile. The aromatic bouquet blends distinct toasted notes with citrus hints of lemon verbena, broom and exotic fruit. On the palate, it is fresh and intensely savoury, offering a measured creaminess and remarkable gustatory precision, ideal for accompanying fish dishes.

Where it comes from

The grapes destined for this Franciacorta are grown in vineyards located in Cazzago San Martino, in the province of Brescia. The area is characterised by morainic soils, originating from ancient glacial deposits, which give the wine a recognisable gustatory tension. Agricultural management focuses on respect for the environment and the natural biological cycle of the vines, through rigorous yield control. This meticulous approach allows for the production of healthy bunches, capable of transferring the authentic characteristics of the soil of origin into the glass.

How it is produced

The manual harvest allows the bunches to reach the winery quickly to preserve their integrity. Processing begins with gentle pressing of the whole bunches to extract only the free-run juice. After static decanting, primary fermentation takes place in temperature-controlled steel tanks, while a portion of the must completes the process in small barrels for about eight months. In spring, the blend is created, followed by the second fermentation typical of the Metodo Classico. The wine rests with ageing on the lees for at least forty-eight months, outlining a harmonious structure and a clean profile.

Founded in 2001 in Cazzago San Martino, Cascina San Pietro, together with the oenologist Alessandro Santini, creates this vibrant Franciacorta Millesimato Dosaggio Zero. The Terre dei Trici Cuvée is made from Chardonnay grapes harvested by hand into crates and pressed within two hours to extract the purest free-run juice. After ageing for at least 48 months on the lees, the 45,000 annual bottles offer a complex elegance, capable of winning the prestigious 4 Vines Vitae AIS award thanks to its harmonious palate.

The Cascina San Pietro farmhouse, situated on the road called "Strada delle vigne di Franciacorta", tills grapes and makes wine since 2001, with the maximum respect of environment and the biological grapes cycle in order to get genuine and unadulterated wine, according with the territorial characteristics.

The viticulture, already present during roman ages in our lands, laid, especially in the lower middle-ages (1001 – 1321) , the basis to rich the modern and specialised grapes cultivation now well-known. The "Cascina San Pietro" farmhouse, is located in "Calino", hamlet of "Cazzago San Martino", in the District called "Franciacorta".

The farmhouse start to makes wine from his own grapes in 2001 after restoration of the old farm rebuilded by the PECIS family and occupied since 1970 by the Trici, a very large family, that tilled as a share-cropper the vineyard of an old noble family owner. The vineyard stretches for six hectares (14.826 acres) tilled by Giuseppe Pecis with the maximum respect of environment and the grapes biological cycle in order to get genuine and unadulterated wine, according to territorial characteristics.

This Metodo Classico accompanies light starters and delicate lean fish recipes with innate elegance, enhanced by a fine and persistent perlage. The pronounced savouriness and vibrant freshness are also perfectly balanced with refined cheese selections. Ideally served between 6 and 8 °C, it offers a sip of extreme harmony and creaminess.
