Vènt Extra Brut from Cantina Toblino is a Traditional Method sparkling wine that elegantly expresses its territory of origin. Made exclusively from Chardonnay, it displays an intense straw yellow colour with golden highlights and a fine, persistent perlage. The bouquet reveals clear complexity, opening with notes of citron, orange zest and russet apple, then evolving towards hints of bread crust, almonds and subtle spicy nuances. On the palate, it stands out for its vibrant freshness, offering a dry, balanced sip with long-lasting flavour persistence.

Where it comes from

This sparkling wine from the Trento denomination originates from vineyards located in Madruzzo, in the Valle dei Laghi, Trentino. The vines grow on fluvio-glacial soil, whose limestone-rich composition, combined with a gravelly-sandy matrix, gives the wine marked incisiveness and a taut profile. Cantina Toblino manages these plots according to the principles of organic viticulture, ensuring a deeply respectful approach to the environment. The structure of the land, together with the area's distinctive alpine climate, allows for grapes with extraordinary aromatic precision.

How it is produced

Production begins with careful manual harvesting, followed by vinification of the base sparkling wine, which rests until spring. The wine is then bottled to start the secondary fermentation in the bottle according to the rules of the Traditional Method, undergoing a prolonged maturation on the lees for about thirty-six months. During this period, delicate cellar operations encourage interaction with the lees, enriching the structural complexity of the sip. After disgorgement, a light dosage preserves the dryness typical of the Extra Brut style, ensuring excellent balance and great ageing potential.

On the one hand, the agricultural company Toblino Srl, which cultivates under organic control the approximately 40 hectares of the ancient bishop’s properties, on the other, Cantina Toblino, which receives the grapes from more than 600 winegrowers for a total of over 850 hectares of vineyards.
