This sparkling wine from the Trento denomination originates from vineyards located in Madruzzo, in the Valle dei Laghi, Trentino. The vines grow on fluvio-glacial soil, whose limestone-rich composition, combined with a gravelly-sandy matrix, gives the wine marked incisiveness and a taut profile. Cantina Toblino manages these plots according to the principles of organic viticulture, ensuring a deeply respectful approach to the environment. The structure of the land, together with the area's distinctive alpine climate, allows for grapes with extraordinary aromatic precision.
How it is produced
Production begins with careful manual harvesting, followed by vinification of the base sparkling wine, which rests until spring. The wine is then bottled to start the secondary fermentation in the bottle according to the rules of the Traditional Method, undergoing a prolonged maturation on the lees for about thirty-six months. During this period, delicate cellar operations encourage interaction with the lees, enriching the structural complexity of the sip. After disgorgement, a light dosage preserves the dryness typical of the Extra Brut style, ensuring excellent balance and great ageing potential.
