Selva della Tesa Chardonnay by Ca’ del Bosco is a still white wine with the Typical Geographical Indication of Sebino, in Lombardy. This Chardonnay, with its elegant and structured profile, fermented in small oak barrels, reveals hints of nashi pear, honeydew melon, orange zest and enveloping notes of brioche. On the palate, it reveals a precise balance with a distinct wet stone minerality, closing with a savoury finish ideal for pairing with seafood pasta dishes, shellfish and mature cheeses.
Where it comes from
The grapes are grown in Lombardy, in the historic Franciacorta area, from certified organic vineyards located in the municipalities of Erbusco, Passirano and Provaglio d’Iseo. The vines have an average age of thirty-five years and are rooted in soils that provide deep aromatic complexity and expressive precision. Rigorous agronomic management encourages the development of sound fruit, ideal for reflecting the true characteristics of the terroir of origin. These pedoclimatic conditions impart a natural gustatory tension to the harvest, accentuating the fresh and mineral character of the wine.
How it is produced
Production follows the Ca’ del Bosco Method, starting with manual harvesting and the washing of the bunches using a hydromassage system. Pressing in the total absence of oxygen allows the free-run juice to be isolated, which ferments in small oak barrels. Ageing on the lees lasts nine months and involves frequent bâtonnage and malolactic fermentation. The different expressions then form a careful blend, bottled by gravity to avoid oxidative shock. A resting period of three and a half years defines the absolute finesse of the flavour profile.
