Where does it come from
This sparkling wine originates in Veneto, among the steep rows of the Rive di San Pietro di Barbozza. This exclusive subzone of Valdobbiadene Prosecco Superiore is renowned for its steep slopes, ideal for imparting precision and character to the Glera. The vines are cultivated using the classic modified cappuccina system. This cuvée is a heartfelt tribute to the founder Giuliano, a pioneering and fundamental figure in the qualitative growth of the entire region.
How is it produced
After harvesting in the second decade of September, vinification follows a process of gentle pressing and fermentation at a controlled temperature. The prise de mousse takes place through a long Charmat Method, with a ten-month period on the lees in autoclave, followed by a period of bottle ageing. This slow maturation gives the wine a particular gustatory harmony. Its dry profile pairs ideally with shellfish and lean fish such as turbot, and also elegantly accompanies delicate dishes based on white meats.
