Description
Aromatic sweet white passito from the heart of Puglia, 13.5% ABV, produced by Tenuta Bocca di Lupo. 100% Moscato Giallo. 0.375 l bottle, 2023 vintage. A wine born from a passion for native grape varieties and the expertise of sun-drying, which concentrates aromas and sugars. The Moscato grapes were harvested at the perfect level of technological ripeness and sun-dried on special trays for 15 days. This drying process increased the sugar content and the appearance of jammy, honeyed aromas, giving this wine remarkable complexity. After destemming and soft pressing, fermentation took place at a controlled temperature (18-20°C) in stainless steel to enhance the grapes' aromatic and qualitative potential. Aged for approximately one year in stainless steel and a further 12 months in bottle. The bouquet is refined, with notes of apricot, jam, jasmine, and chestnut honey. Golden yellow in the glass, it is soft, silky, and long on the palate, accompanied by a pleasant acidity that balances the sweetness.

| Wine making | The Moscato grapes were harvested at the right degree of technological ripeness and dried in the sun, on special racks, for 15 days. The drying resulted in an increase in the sugar content and the appearance of aromas such as jam and honey that give this wine considerable complexity. After destemming and soft pressing, fermentation was carried out at a controlled temperature (18-20°C) in stainless steel in order to enhance the aromatic and qualitative potential of the grapes. |
