This wine originates from the Marche region, in the area of Matelica. The vineyards grow on loose soils with excellent southern exposure, situated at an altitude between 350 and 450 metres. The vines, cultivated using the double arched cane and Guyot systems, demonstrate Belisario's commitment to enhancing the Matelica territory through careful management of vegetative balance.
How it is produced
Production begins with gentle vacuum pressing and clarification of the musts by flotation. A reductive vinification process is used, employing carbonic snow to preserve the integrity of the aromas and prevent oxidation. Alcoholic fermentation takes place in temperature-controlled tanks for about twenty days. The process continues with maturation in stainless steel for four months, aimed at enhancing the varietal character, and concludes with one month of rest in glass before release to the market.
