How it is produced

Production begins with a carefully timed harvest, closely monitoring the ripening curves to pick the grapes at their peak balance. The must undergoes static cold settling, followed by a slow fermentation at controlled temperature for about thirty days. Maturation continues entirely in glass-lined cement vats for fifteen months.
