Description

What type of wine it is

Barraco's Zibibbo is an aromatic and distinctly dry organic white wine, an authentic expression of the Terre Siciliane, with fermentation in steel and ageing in concrete. The bouquet weaves notes of orange blossom and lychee with hints of basil and citrus peel. On the palate, it offers a savoury and thirst-quenching sip, supported by excellent persistence and a clean ginger finish. This precise sensory identity harmoniously accompanies seafood recipes and proves ideal for enhancing pumpkin tortelli, delicate salt-baked fish and the fragrant spices of Asian cuisine.

Where it comes from

Zibibbo grapes thrive in Marsala, western Sicily, cultivated using the Guyot system in low espalier. The vines take root in dark clay-limestone soils, whose mineral richness gives the wine a marked savoury character. To keep the freshness intact, the early September harvest is carried out by carefully monitoring the ripening. This choice ensures a perfect balance between natural acidity and the aromatic concentration of the grape variety, enhancing the vocation of the territory and the authenticity of the Terre Siciliane.

How it is produced

The vinification is designed to enhance the nature of the fruit. After harvesting, the bunches undergo maceration on the skins for twenty-four hours, which is essential for extracting olfactory nuances while preserving the dry character of the wine. The must then undergoes alcoholic fermentation in steel tanks, maintaining a clean and defined aromatic profile. The process concludes with targeted ageing in concrete tanks until spring, imparting structural harmony and stability before bottling.

History and curiosities

Since 2005, the Barraco winery has been vinifying Zibibbo as a single variety, transforming Sicily's most famous aromatic grape into an elegant organic dry white Terre Siciliane IGT.
