Where it comes from

How it is produced
The sparkling process overseen by Banfi uses the Charmat method, with fermentation at a controlled temperature in steel tanks. The process is halted by cooling to preserve the natural residual sugar and maintain the liveliness of the mousse. Best served chilled, it harmoniously rounds off a meal alongside petits fours, strawberries and hazelnut cake, and also proves interesting when paired with semi-mature cheeses.
