What kind of wine is it
Ayala Champagne Le Blanc de Blancs Extra Brut is a pure expression of Chardonnay grapes, crafted according to the strict principles of the Traditional Method. In the glass, the Champagne displays a bright pale yellow with white gold highlights and an extremely fine, lively mousse. The bouquet offers aromas of pear, grapefruit, jasmine, orange blossom, yuzu, anise and ginger. On the palate, it is direct, delivering a broad and taut sip where citrus and white fruit blend with soft hints of pastry and acacia honey. A pronounced chalky minerality and a pleasant savouriness define the finish, which is long and persistent.
Where does it come from
This cuvée faithfully reflects the terroir of the Côte des Blancs and the Montagne de Reims. The selected grapes come from outstanding villages classified as Grand Cru and Premier Cru, such as Chouilly, Cramant, Le Mesnil-sur-Oger, Oger, Cuis and Vaudemange. Ayala, a historic Maison based in Aÿ, enhances these soils by bringing the authentic chalky character of the region to the glass. This Blanc de Blancs is ideal as an aperitif and pairs perfectly with oysters, scallop carpaccio, sea bass tartare, goat’s cheese and desserts.
How is it produced
The winemaking process is aimed at preserving the integrity of the fruit, with the first fermentation taking place in stainless steel tanks at a controlled temperature. The winery uses micro-vinifications for individual plots, a technique that allows the nuances of each vineyard to be isolated and enhanced. Subsequently, the secondary fermentation in bottle initiates a long ageing on the lees for six years, a crucial step in developing the silky texture and aromatic evolution characteristic of the Traditional Method. The low dosage, typical of the Extra Brut style, ensures a dry profile.
