What kind of wine it is
Riserva Graal is a Brut sparkling wine with an elegant profile, an authentic expression of Trentodoc by Altemasi. This Traditional Method is created from a refined blend of Chardonnay and Pinot Noir grapes, selected to enhance finesse and structure. In the glass, it displays a straw yellow colour with golden highlights, enriched by a fine and continuous perlage. The bouquet is complex, with notes of red apple and citrus blending with hints of bread crust and sweet almond. On the palate, it is savoury, balanced, and features a clear acidity that ensures a long-lasting finish. Its pronounced harmony pairs beautifully with roasted fish, white meats, cheeses, and filled pasta.
Where it comes from
The grapes for this Trento come from the highest and most renowned hillside areas of the region, including the Hills of Trento, the Brentonico Plateau, and the Valle dei Laghi. The vineyards are situated between five hundred and seven hundred metres above sea level, an ideal altitude to ensure optimal ripening and preserve vibrant freshness. The fluvio-glacial and volcanic soils, which are generally shallow, impart a distinct savoury character and great precision on the palate. This unique mountain environment is crucial in defining the aromatic elegance and structural balance that characterise the wine.
How it is produced
The production process begins with manual harvesting and gentle pressing. The first fermentation of the must takes place at a controlled temperature in stainless steel tanks and barrels. Once the base wine has matured, the secondary fermentation occurs in the bottle according to the Traditional Method. The complexity is achieved through a long ageing on the lees for seventy months before disgorgement. This maturation gives the wine an enveloping profile, while maintaining a dry and expressive Brut dosage.
