Description

What type of wine it is

The Praepositus from Abbazia di Novacella is a still white wine with an intense aromatic profile, a faithful expression of **Gewürztraminer** grapes from the Alto Adige Controlled Designation of Origin, vinified in stainless steel. The bouquet is distinguished by its definition, with clear notes of orange, rose petals, lychee, ginger and coriander. On the palate, it is **juicy and spicy**, balanced by a fresh mineral vein that amplifies its long persistence. This label boasts a precise varietal identity and excellent **ageing potential**.

Where it comes from

The grapes grow in the Bressanone basin and in Varna, in the heart of the **Isarco Valley**, in vineyards situated between 600 and 650 metres above sea level, with an optimal south and south-west exposure. The soils have a light, stony **morainic matrix**, rich in gravel, micaceous schist and quartzite—essential elements for infusing mineral freshness. High-density Guyot training with low yields ensures **even ripening** and a distinct aromatic complexity in the grapes processed by Abbazia di Novacella.

How it is produced

The harvest takes place between mid and late October, the ideal time to capture the full aromatic maturity of the **Gewürztraminer**. Fermentation takes place at a **controlled temperature** to protect the most delicate aromas. The entire vinification and maturation cycle takes place in **stainless steel tanks**, a choice intended to preserve the purity of the flavour profile and the integrity of the fruit. Excellent served chilled, this white pairs perfectly with gorgonzola risottos, shellfish and dishes based on **oriental spices**.

Novacella is the Northernmost wine-growing area in Italy. On the sunniest slopes surrounding the Abbey, fine vines have been producing white grapes for 8 centuries, which are vinified in the monastery cellar.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.

A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.

In our wine cellar, the grapes from these three vineyards are raised to wines whose distinct character and quality has been rewarded by the loyalty of generations of friends and connoisseurs.

We recommend pairing this with gorgonzola, pear and walnut risotto. Its spicy notes complement mild curry prawns or lobster with asparagus and vanilla foam. Served at 10–12 °C, this Gewürztraminer enhances both cheeses and shellfish.
