The process begins with a brief maceration on the skins, ideal for extracting the rosé colour and aromatic profile. The primary fermentation takes place in stainless steel thanks to the action of indigenous yeasts. Ageing for thirty months on the lees imparts structure and complexity, preceding the manual riddling operations. On the palate, it is fresh, savoury and characterised by a long persistence marked by citrusy returns. The bouquet releases notes of wild strawberry, raspberry and mandarin, intertwined with star anise, cinnamon and delicate pastry nuances.
