Description

What kind of wine it is

1701 Brut Nature is a rigorous Franciacorta Metodo Classico with a pure profile, born from an elegant blend of Chardonnay and Pinot Noir. Presented as a zero dosage, it offers a taut sip with lively acidity, enhanced by a refined perlage. The bouquet reveals fragrances of peach, plum and candied citrus, enriched by hints of orange blossom and notes of brioche. A delicate savouriness makes it ideal for accompanying starters, fish and shellfish dishes or cheeses.

Where it comes from

The grapes are grown in Cazzago San Martino, cultivated in the Sabbioni, Magrì and Brolo vineyards. The vines, trained using the Guyot system, sink their roots into deep moraine soil, rich in stony fragments and characterised by silty-sandy deposits. This geological matrix gives the wine a marked clarity and a distinct savoury texture. The estate follows the strict principles of biodynamic and organic farming, promoting the vitality of the land to deliver an authentic and vibrant territorial profile.

How it is produced

Vinification begins with a spontaneous primary fermentation, guided by indigenous yeasts in steel and cement tanks. The prise de mousse takes place according to the rules of the Metodo Classico, with ageing on the lees for around thirty months, enriching its aromatic profile. Clarification is achieved through careful manual riddling before disgorgement. The absence of added sugars in the final dosage ensures a pure sip, true to the real essence of the original fruit.

History and Curiosities

An expression of Cazzago San Martino, the 1701 Brut Nature Franciacorta DOCG combines craftsmanship and respect for nature. Created by oenologist Giulio Salti following the strict standards of Demeter biodynamic certification, this Traditional Method wine enhances the terroir without compromise. The absence of added sugars in the zero dosage and the patient manual riddling, after thirty months of ageing on the lees, deliver a taut, vibrant and genuine sip. Appreciated by the Italian Sommelier Association, it is produced in limited quantities for convivial moments.

Making quality wines, innovative and traditional at the same time, is the goal we have set ourselves since the beginning , in 2011, when we purchased the farm from the Conti Bettoni Cazzago family. The name of the winery, 1701 , is due to the first vintage of a wine produced from the "Brolo" : a suggestive domestic vineyard surrounded by walls from the 11th century. History repeats itself, because today from that same vineyard - in the splendid setting of Palazzo Bettoni - we obtain an extraordinary Blanc de Noirs.

We have decided to adhere to a healthy and environmentally friendly agriculture , which improves and enriches the soils in which it is applied. And above all, which gives a natural wine with a unique taste.
