||The Vigna Colonel has an average age of 40-45 years, for the maintenance of which plants are replanted from time to time.

||In red with maceration with skin soaking inside stainless steel vats. The must stays on contact with the skins for 25-30 days.
||The new wine is racked several times before being placed in large oak barrels where it ages and ages for 28 months.
||It can accompany game meats, cheeses (preferably cow's milk).
