Harvest |
By hand, in September. The perfectly ripened grapes are harvested during the chilly early hours of the day. |
Vinification |
Grapes soon reach the winery, where the whole grapes are softly pressed, destemmed and finally cold macerated for 1-2 days. The first must thus obtained, after an initial racking, is placed in temperature-controlled fermentation tanks. |
Ageing |
The wine is kept on its lees for at least 8 months before bottling, and 8-9 months after harvest. |
Pairing |
Fried fish, vegetables fried in batter, and flans. It also pairs with tasty cheeses and seafood dishes made with tomato. |
