Colour

Deep red with slight garnet notes.

Bouquet

Aromas of overripe fruit and cherries in alcohol combine with notes of spices and roasting to produce a bouquet of great complexity.

Flavour

Excellent balance and volume in the mouth due to the alcohol content and refined tannins. Very pleasant to drink.

Origin	Selected vineyards in Valpolicella (Verona).
Harvest	Grapes harvested by hand in Plateaux, when they reach perfect phenolic ripeness.
Fermentation temperature	18-20 °C
Fermentation period	14-18 days.
Vinification	After about 90 days of drying, the grapes are pressed. After cold maceration for 2-3 days, alcoholic fermentation starts at a temperature of 18-20°C for 14-18 days.
Ageing	In French oak barrels for 12 to 18 months.
Total acidity	5.75 gr/L
Residual sugars	3.90 gr/L
Allergens	Contains sulphites
Pairing	Ideal with red meat dishes, cheeses.
