The name "Col del Sas" originates from the production hill located in the town of Valdobbiadene. Today, this wine is produced according to the positive characteristics of the company's various vineyards located throughout the Conegliano Valdobbiadene DOCG area, thus gathering in a single product all the organoleptic properties of the various zones. The blending of grapes and the blending of the wines makes it possible to achieve singular levels of refinement and harmony. The Brut is mainly known and appreciated thanks to its elegance.

Vinification Obtaining a quality wine undoubtedly requires the vinification of quality grapes. Soft pressing is carried out to obtain only the first must without maceration. Then, the fermentation with yeasts transforms the sugars into alcohol and other minor substances that are fundamental for the wine's aroma and structure. This process occurs in steel tanks at a constant temperature of 18 - 20 degrees to prevent bacterial attack. Once fermentation is complete, the wine is subject to racking and clarification.
Ageing Charmat Method enhances the elegance of the aromas and the freshness of the fruit aromas. The sparkling process occurs in an autoclave at a constantly controlled temperature.
