Soil composition	Soil of limestone origin on the Roveré della Luna cone, of porphyry origin in Val di Cembra and rich in marly limestone flakes on the Trento hill.
Yield per hectare	80 hl
Harvest	The harvest is carried out strictly by hand.
Vinification	The whole bunches are softly pressed following the traditional processes of the Metodo Classico. The must ferments at a low temperature in stainless steel tanks where it remains in refinement until the following spring. This is followed by blending and re-fermentation in the bottle.
Ageing	Subsequent maturation on the lees lasts for over 30 months. The final stages involve disgorging and the possible addition of the liqueur d'expedition.
