According to the Classic Method, the sparkling process is set over a very long period: 60 months between second fermentation, ageing in the bottle, riddling by hand on pupitres, disgorgement and subsequent rest before marketing. The dosage in full extra brut style gives the whole emphasis to the scents of the carefully selected grapes. |
Pairing |
Excellent throughout a meal, particularly with seafood starters, steamed lobster, grilled lobster, blini pasta with smoked salmon and sour cream. Moreover, it pairs with swordfish carpaccio, white meat and pasta alla carbonara. |
