Vinification |
Soft pressing of the must, fermentation in temperature-controlled stainless steel vats. The base wine is aged in French barriques for about 3 months and then bottled with prolonged contact on the yeasts, where the second, slow natural re-fermentation occurs. |
Ageing |
In the bottle, in contact with yeasts between 42 and 48 months. |
Pairing |
It is perfect as an apéritif, with fish and shellfish dishes, risottos and sweet pastries. |
