Production technique |
Partly mechanical and partly manual, using techniques permitted exclusively in organic farming. No insecticide, acaricide or chemical weed control treatments are carried out. Fertilisation is carried out by adding organic substances, such as manure. |
Vinification |
In white, using yeast starter selected from the company's vineyards. |
Ageing |
70%: 6 months in steel on the lees, 30%: 6 months in French oak barriques. In both cases, two bâtonnages per week are carried out in November and December. Bottling occurs at the end of April. |
Pairing |
It pairs well with appetizers, white meats and fish. |
