Harvest |
Manual with grapes selection and transport in small boxes beginning from the first decade of August. |
Vinification |
Soft pressing of the grapes fermented in steel tanks at controlled temperature (16 °C). Cold decanting static. Inoculation with selected yeasts. The first 8 months of aging in steel. |
Ageing |
On leaven for a period of about 55 months in cellars at a constant temperature of 12-15 °C. |

Beautiful Franciacorta for refined aperitifs, perfect with white fish sauce pastas, enveloping with char and whitefish, ideal with lightly spicy white meat. |
