Cocchi Alta Langa Blanc De Noirs Pas Dosé 2016

Pas Dosé is Cocchi’s Brut Nature made with pure Pinot Noir. An exceptional vintage with grapes characterized by unexpected concentration and acidity which made us foresee the good result of a long maturation. After 60 months of wait we did the dégorgement with the first bottles, and we realized how this 100% Pinot Noir cuvée could give its best expression without dosage.

	Perlage Fine and persistent perlage.
	Colour Bright golden yellow.
	Bouquet Elegant nose, guided by complex olfactory nuances that recall candied citrus fruits, acacia honey, toasted hazelnuts, marzipan and brioche.
	Flavour In the mouth there is a good savouriness and a dry taste typical of the Pas Dosé, a remarkable fresh and defined taste that reminds of raw hazelnut and candied white fruits, intense and involving for the good balance of its lightly acid hues.

Yield per hectare	Presses are loaded with 7800 kilos of grapes with a must yield of 55%.
Harvest	The grapes are hand-picked.
Vinification	First fermentation took place in small steel vats for three weeks. Foaming and aging ‘sur lattes’ over a period of 60 months.
Ageing	The remuage is done by hand on wooden A-shaped racks (the pupitres) and is followed by frozen disgorgement (dégorgement à la glace). Zero sugar added.
