||Soft and progressive pressing of the bunches with fractionation of the must; alcoholic fermentation in steel vats and refinement of the best plots in oak barriques, where they mature for 6 months in contact with the yeasts.
||Preparation of the cuvée in the spring following the harvest, exclusively with 100% of the vintage wines. Second fermentation in bottle and subsequent ageing on the lees for at least 5 years, followed by a further 6 months after disgorging.
||Millesimato is recommended throughout the meal; it pleasantly accompanies important appetizers, fish main courses, white meats and medium-aged cheeses.
