Harvest By hand, when grapes are perfectly ripe.
Vinification Grapes and berries were selected on arrival at the winery before crushing and fermentation. Natural fermentation occurred in open 500-litre Frech oak barrels before gentle pressing in a basket press.
Ageing The young wine was returned to French oak barrels, where malolactic fermentation was completed and a further 12 months of ageing followed before bottling.
