Blackcurrant leaves and cassis compete for the primacy of the bouquet with a heady violet scent.

Flavour

The palate is elegant and suave, with understated elegance as the main feature. The flavour of perfectly ripe fruit cake comes through, along with cassis and bramble, cedar spice and a delicious subtle succulence that contributes to the warm and comforting texture.

Harvest The grapes are harvested by hand, placed in small crates and transported to the winery by refrigerated trucks.
Vinification In the winery, the whole grapes are sorted using an optical sorter and then gravity fed into wooden fermenters. Each batch is cold-soaked for a few days and then slowly brought to temperature. Fermentation takes place naturally in the wooden vats.
Ageing The wines were aged for 24 months in 80% new French oak. After bottling, the wine is aged in the bottle for a further 24 months.
