Harvest	The grapes are harvested by hand, placed in small crates and transported to the winery in a refrigerated truck.
Vinification	In the winery, the whole grapes are sorted by hand twice and then gravity fed into the fermenters. Each batch is cold-soaked for a few days and then slowly brought to temperature.
Ageing	Malolactic fermentation occurs naturally in barrels. The wines were aged 18-24 months in new 225-litre French oak barrels, bottled unfiltered and aged in bottles for one year.
