|| The time of the Sauvignon Blanc grape harvest has been chosen as a function of the relationship between sugar concentration and ultimate expression of the varietal aromas. The grapes came to fruition in advance favored by constant temperatures and lack of rain. When harvested the grapes were extremely healthy and lesser amounts than normal. The harvest of Sauvignon Blanc was held in the third week of August, a dozen ten days after the Chardonnay. Good sugar content, balanced content of acids, very well expressed varietal aromas of Sauvignon Blanc.
||Those picked were immediately transferred to the cellar and gunned through the passage in a refrigerated conveyor which has lowered the temperature before pressing (this is important to keep the varietal characteristics). A part of the Sauvignon Blanc has done a cold maceration for a few hours in special tanks in order to obtain the maximum extraction of aromas from the skins. After soft pressing, the must has been maintained for some hours at a temperature of 10 ° C for illimpidirsi in a natural way before fermentation. It 'was then poured into stainless steel tanks where alcoholic fermentation took place at a controlled temperature, not exceeding 16 ° C. Completed the alcoholic fermentation the wine was stored at low temperature (about 10 ° C) to prevent malolactic fermentation and ensure the preservation of organoleptic characteristics.
||The Sauvignon Blanc was then blended with a small amount of Chardonnay wine, fermented in wood but has no malolactic fermentation.
