The Brut TRE is my younger sparkling wine, suitable for the aperitif rite or in combination with first courses. I wanted it very dry and acid, to agree with the structure - which, though apparently fresh - leaves the foreseeable future evolution in the bottle. I have to say the truth: at first I was reluctant to produce such a bottle (for my fees): I love the evolved and important bubbles, and 3 years on the yeast seemed too few to be able to express the best of my sparkling bases. But I still decided to try it, with the promise to myself that "If I do not come out a Boules I do not." So much worried about it: a younger and more drinkable Buvoli came out, but always recognizable - my friends say - for persistence and importance in the mouth.
Bitter straws.
It evokes sensations of iris, bergamot peel, limoncella apple, hazelnut, biscuit bread and candy.
It denotes great balance; the acidity that refreshes the palate and calls new sips is very enjoyable. Slow closing on toasted notes.

Weinherstellung The second fermentation takes place normally in the spring, assembling bases of different different vintages, of which a part of the old reserve aged in wood.
Verfeinerung He then spent more than 3 years on the yeasts before disgorgement, and a further 6 months before being put on the market to allow the liqueur to integrate.
Alkohol 12,50% Volumen
Matching It does best its organoleptic notes when accompanied with fish meals, especially crustaceans. Among the dishes that are best exalted is the sea bass on the cartoccio. It does not disagree with accompanying sweets, especially with almond and candied pasta
