| Vinification |
Before the grapes are harvested by hand, they are vinified with soft pressing and fermented at controlled temperature of 15-16 °C. Then It follows the period of refinement in steel tanks and the secondary fermentation in bottle which is expected at the end of winter. |
| Ageing |
The period of aging on the lees is never less than 30 months. Finally, the bottles stay in the winery for some months before being commercialized. |
| Pairing |
It is certainly the most suitable Franciacorta to open a meal, whether it is used as an aperitif or it can accompany all our dishes. Excellent with fish dishes, in particular when they are delicate, it gives us pleasant sensations when matched to white meat or fresh goat cheese. |
