Thin morainic: with little depth to thin, sandy-silty substratum with gravel and pebbles, rock fragments from frequent to abundant, sandy loam texture, alkaline reaction, quick drainage. Distal colluvia: deep, absent to scarce rock fragments, surface loam texture, clay loam at depth, reaction from neutral to sub-alkaline, medium drainage. Fine deposits: deep, few rock fragments, silty loam texture, sub-alkaline reaction, mediocre drainage. |

Vinification |
The grapes, painstakingly selected during the harvest, are softly pressed to extract only the qualitative heart of the product. The first fermentation takes places in thermoconditioned stainless steel tanks where the sparkling wine base rests for at least 8 month before assembly. In creating the Cuvée of this product, minimum parts of all the first selections are included, thereby creating a balanced and complete product, reflecting all the facets of a company in contact with the land for centuries (hence the name Sempiterre). |
Ageing |
The second fermentation in the bottle, according to the tradition of the Franciacorta method, is slow and kept under control day by day. Every bottle undergoes, on average, 24 months of ageing on the lees before ending with a not too invasive dégorgement with a liqueur of 6 g/l of sugar. |

Suitable for any occasion and any company, it proudly accompanies the most varied aperitifs but also more demanding preparations, especially freshwater fish. |
