Soft pressing of grapes, fermentation in steel vats at controlled temperature, after which wine is kept in contact with the yeasts by batonnage (stirring) for further 6 months. |
Ageing |
Afterwards, the Franciacorta is prepared for the lees ageing with which the second fermentation in the bottle begins for the refinement on the lees for at least 30 months. |
Pairing |
Splendid as aperitif, excellent with meat or fish carpaccio, smoked salmon, seafood and vegetable salads, great also with sweet pastries. |
