Production technique |
Total sulphites: between 4 and 7 mg/litre and naturally produced by yeasts during fermentation (declaration limit 10 mg/litre). |
Vinification |
Manual selection of the best clusters at the press-filling stage, pressing with limited yields (50%) to maintain high acidity. Only the first must is used and fermentation in stainless steel occurs at a controlled temperature of 16-18°C. No use of preservatives, including sulphites. |
Ageing |
The second fermentation occurs in the spring following the harvest. Minimum 36 months on the lees in the bottle and at least 6 months after disgorgement. |
