Villiera Tradition Brut Natural Chardonnay is a Cap Classique sparkling wine produced by Villiera Wines. Made exclusively from Chardonnay, this wine stands out for its Brut Nature pas dosé profile, ensuring a dry, clean and precise sip. The sparkling process using the Traditional Method creates a rounded and concentrated structure, enlivened by a fine perlage. On the palate, notes of yeast, green apple, pear and bread crust emerge, enriched by toasted and mineral hints. This sparkling wine originates from Stellenbosch, South Africa, a renowned wine region known for its mineral-rich soils and distinctive microclimate. How is it produced

The process begins with whole bunch pressing, followed by natural primary and malolactic fermentation. After six months resting on the primary lees, the secondary fermentation takes place according to the Traditional Method. A long maturation on the lees of around four years enriches the cuvée with creamy aromas, hints of dried fruit and an elegant aromatic complexity. The choice of a pas dosé style keeps the sip pure and free from added sugar dosage. The entire production process is also characterised by vinification without added sulphur, a practice that enhances the purity of the fruit and the natural vitality of the wine.

From this winery
Cousins Jeff and Simon Grier started the family-owned Villiera Wines outside Stellenbosch in 1983 and embarked on an extensive replanting of classic and local varietals.

Cathy Brewer (née Grier) later joined the family team to head up the sales, marketing and export divisions. The introduction of hi-tech cellar facilities for the production of still wines as well as Cap Classique combined with a unique wine business philosophy has seen Villiera developing into one of the largest private wineries in the country.

Wine making The whole bunches were carefully pressed; the cuvée underwent a natural primary fermentation and a natural malolactic fermentation, then remained on the primary lees for 6 months without the addition of any additives. Subsequently, it underwent a controlled second fermentation in the bottle (traditional method) with ageing on the lees for about 4 years; no sulphur was added and no dosage (pas dosé).
