How it is produced

Production begins with manual harvesting and careful selection of the bunches. Fermentation takes place in temperature-controlled steel vats, with maceration on the skins. Gentle pumping over optimises polyphenolic extraction while maintaining aromatic purity. The wine then matures for thirty-six months, twenty-four of which are spent in wooden barrels, concluding the process with bottle ageing. This process defines its structure, balancing the fruit with elegant toasted nuances.
