Soil composition The plot enjoys a west-southwestern exposure and the old vines (35-40 years of age) and the composition of the soil (which consists of 10% sand, 40% loam, and 50% clay) make this a significantly different vineyard compared to the others of Prunotto. These, in addition to a variety of exposures, have notably different soils (on average 25% sand, 25% clay, and 50% loam).
Harvest The grapes were selected in the vineyard, pressed and partially destemmed.
Fermentation temperature Maximum temperature of 86 °F (30 °C).
Fermentation period Approximately 15 days.
Vinification The fermentation, carried out in a stainless steel tank at a maximum temperature of 86 °F (30 °C), lasted approximately 15 days. The malolactic fermentation was terminated before the end of the winter.
Ageing In oak casks, different capacity, lasted 18 months and then continued in stainless steel tanks for an additional 24 months. Bottle aging before commercial release in the Prunotto cellars lasted another 24 months.
