The Migliara is made from Syrah grapes from the vineyard that are selected (280-300 meters above sea level) |
Harvest |
The harvest is done manually at the end of September, picking the grapes in small boxes. |
Production technique |
The low yield per plant, obtained also through green harvesting (thinning out) made at the end of July, together with a perfect ripeness of the grapes, allows us to obtain a wine of great concentration, velvety tannins and elegant, with fruity and sweet pepper and spicy notes. |
Vinification |
The duration of fermentation (controlled temperature 18-27 °C) and maceration of the skins in conical wooden vats, ranging from 15 up to 20 days depending on the year, after which the wine is drawn off and transferred immediately barrels, where malolactic fermentation takes place. |
Ageing |
The aging in the cellar is extended for 24 months, in separate batches. |
